Moinmoin is a Nigerian steamed bean pudding made from peeled black-eyed peas. Here's a simple recipe:
Ingredients:
- 2 cups black-eyed peas
- 1 medium onion, chopped
- 2-3 fresh peppers (such as habanero or scotch bonnet), chopped
– Fish (boiled)
– Eggs (boiled)
- 1/4 cup palm oil or vegetable oil
- 1/2 cup water
- Salt to taste
- Optional: chopped vegetables like bell peppers, tomatoes, or spinach
Instructions:
1. Soak the black-eyed peas in water overnight, or for at least 4 hours, to soften them.
2. After soaking, rinse the beans thoroughly and remove the skins by rubbing them between your hands or using a blender with water.
3. In a blender, combine the peeled black-eyed peas, chopped onion, peppers, and a little water. Blend until you get a smooth paste. You may need to add more water as you blend to achieve the desired consistency.
4. Transfer the blended mixture to a mixing bowl and add the palm oil or vegetable oil. Mix well.
5. Season the mixture with salt to taste, and add any optional chopped vegetables if desired. Add eggs. Squeeze the fish into small pieces and pour into the blended mixture. Mix until well combined.
6. Prepare your steaming container by greasing it lightly with oil or lining it with banana leaves.
7. Pour the mixture into the prepared container, filling it about halfway.
8. Steam the moinmoin over medium heat for about 45 minutes to 1 hour, or until it is firm and set.
9. Once cooked, allow the moinmoin to cool slightly before slicing and serving.
